Verumpuli ( Coconut Curry with Drumstick & Tomato)

Ingredients

Drumstick cut into 2 inch length pieces cut through the middle– 2 nos.
Coconut grated – ½ coconut
Ripe Tomato cut into medium sized pieces – 1 no.
Raw Mango pieces – a few small pieces
Red chilli powder – ½ tsp
Turmeric powder – 1/5 tsp
Small onion cut into small pieces– 6 nos.
Green chilli cut into small pieces– 2 nos.
Curry leaves – for garnishing
Mustard seeds – 1 tsp
Olive oil – 1 tbsp
Fenugreek powder – ¼ tsp
Dry red chilli – 1 no.
Salt to taste

Method

Cook in a pan drumstick, green chilli, raw mango pieces, turmeric powder, and salt and let it cook well with a required amount of water. Grind coconut, red chili powder, onion and put it in the above cooked items in the pan. Mix well. Add fenugreek powder. Just let it to simmer, do not increase the flame, otherwise water will separate out. Heat a pan, add oil, mustard seeds, and dried red chilli and curry leaves and add to the above pan. Mix well on a very low flame. Take it out of the flame and serve with rice.
