This dish has been inspired from the north Indian dish Gaajar ka Halwa
or Carrot Halwa as it is commonly known as. Its one of my all time favourate
desserts as it is so easy to make and so very delicious.
Ingredients
Carrots grated – 300gms
Milk – 1 ½ cup
Sugar – ¾ cup
Butter – 25 gm
Green Cardamom – a pinch
Nuts like almond, Cashew and some raisins – some for garnishing
Method
Heat up a pan and add the grated carrot and milk and mix well. After a
few minutes when the milk starts to boil add the sugar and butter. Mix well.
Keep mixing the mixture to prevent the carrot from sticking to the pan. Mix
until the milk evaporates and gets totally absorbed by the carrots. Mix the
chopped nuts and raisins as a way to garnish the dish. Off the fire and put the
carrot halwa into your serving dish and serve it hot or cold as you like.
