Fried Capsicum, Onion & Eggplant Platter

Ingredients

Capsicum cut into square pieces– 1 large
Onion cut into 4-6 pieces length wise, horizontally and diagonally– 1 no.
Eggplant/ Brinjal/Obigenes cut into thin round slices - 2 big nos.
Olive Oil – to pat on the frying pan
Salt to taste

Method
Pat a little oil in a pan and put the onions, capsicum and salt and fry. Cook till it turns golden. After taking it out of the pan, pat some oil and put in the sliced eggplants and fry till it turns golden on both sides. Serve hot by transferring into a serving dish.
