Egg Burji ( Mutta Chikkiyathu)

Ingredients
     

Egg – 3 nos.
Green chilli – 2 nos
Onion – 1 no.
Tomato – 1 no.
Garlic cut into small pieces – 2 cloves
Ginger cut into small pieces – 1 small piece
Olive oil – 1 tbsp
Salt to taste
Coriander leaves for garnishing

Method

Heat oil in a pan, put green chilli, onion, garlic & ginger and cook well. When it turns golden add the tomato and salt. Add in the eggs, well well with a spoon. Keep mixing without the egg getting stuck to the pan. When fully cooked, garnish with coriander leaves. Serve hot with chapatti, roti or rice.
