(Muringhakkaya-Chakkakuru Thoran)
Ingredients
Drumstick peeled and cut into 3 inch pieces and halved – 3 nos.
Jackfruit seeds cut into thin pieces lengthwise after removing outer
skin – 10 nos.
Coconut grated – 1 cup
Turmeric powder – ¼ tsp
Red chilli powder – ½ tsp
Cumin powder – ½ tsp
Garlic – 3 cloves
Salt to taste
Curry leaves for garnishing
Oil – 1 tbsp while garnishing
Method
In a mixer, grind not fully but partially; coconut, turmeric, red
chilli, cumin, garlic. Heat a pan into it add the ground chutney with the
drumstick & jackfruit seeds & a little water and let it cook till it
gets done. Mix well. When fully cooked, add some coconut oil and curry leaves
for garnishing purpose and in turn giving it a good taste. Serve hot.
