Aviyal

Ingredients

Coconut grated – ½ side of a coconut
Cumin seeds – 1 tsp
Turmeric powder – ¼ tsp
Garlic – 2 clove
Small onion – 3 nos.
Raw Banana – 2 nos.
Cucumber – 200gm
Snake Gourd – 100gm
Yam – 150 gm
Long Beans – 3 nos.
Drum stick – 1 no.
Green chilli – 3 nos.
Curd – 2 tbsp
Salt to taste
Coconut oil while garnishing
Curry leaves – for garnishing

Method


Cut all the vegetable into thin 1 inch length wise pieces. Boil the vegetables with water and salt. In a mixer add coconut, cumin, garlic, small onion, turmeric, green chilli, and curd. Mix well. After the vegetable gets cooked, add in the grinded ingredients from the mixer to it. When the whole mixture sets and gets cooked, add the coconut oil and curry leaves for garnishing. Serve hot.
