Beetroot Pachadi(Salad)

Ingredients
   

Beetroot grated – 2 nos.
Carrot grated – 1 no.
Green chillies – 3 nos.
Curd – 1 cup
Coconut grated – 3 tbsp
Salt to taste

Method

 

Heat oil in a pan, add mustard seeds, and let it to splutter. Then add in 2 green chillies, grated carrot and beetroot. Add salt. Mix well and let it to cook. In a blender add coconut grated and 1 green chilli. Blend it to a fine paste. Add curd to it and again blend the mixture. When beetroot is fully cooked, remove from flame and add the curd- coconut mixture to it. Mix well, it is now ready to serve.
